CARROT BEANS PORIYAL -VERSION 1

    Carrot beans poriyal - one of the low fat, healthy and colorful dish. It is very easy to prepare. I usually prepare this dish when I have only few carrots and beans which is not enough to cook each separately. It suits well with chapati, steamed rice & any curry/Kuzhambu.






Ingredients:

Carrot
1 Cup (Minced)
Beans 1 Cup (Minced)
Coconut 2 tblsp (Grated) - Optional
Green Chilly 2 Nos (Slit lenghtwise)
Corainder leaves 1/4 cup (Finely Chopped)
Turmeric Powder A Pinch
Onion/Shallots 1/2 cup (Finely Chopped)
Salt As per taste
Mustard 1/2 tsp
Curry leaves 7 - 8 Nos
Bengal gram/Urad dhal 1 tblsp
Oil 2 tblsp






Method:

1) In a pan heat oil, add mustard seeds once it splutters add bengal gram\urad dhal, then add Green chillis, Curry leaves and onions. Saute them well.

2) Add chopped carrot and beans when the onions changes to translucent, then add salt, turmeric powder and saute them well. Sprinkle some water and close the lid. Stir them few minutes once and cook for 8 - 10 minutes.

3) Finally add grated coconut, chopped coriander leaves and mix them well.




4) Now transfer it to the bowl and serve it as side dish with steamed rice & curry.




Note:
  • Minced - Mince is very finely chopped, as small as you can cut.
  • Take out a piece of carrot and beans from the pan, press with your index finger and thumb to check whether they are cooked well.
