ARISI PARUPPU SADAM / ONE POT MEAL / LUNCH BOX RECIPE

Whenever I think of Arisi Paruppu Sadam the first thing which comes to my mind is, getting up early in the morning, preparing dishes for whole family, packing in a banana leaf covered with news paper or packing in boxes & carrying plastic plates, I am sure most of us where seen this while our mother's busy doing this and ourselves getting ready with full expectation about summer vacation / Outing / Picnic / Family trip. Whole day playing with friends/Cousins and with full hunger having those dishes hmm ...tastes like heaven.



 In those days wherever people goes they will pack their food along with them. There are some dishes that won't get spoiled for almost two days. List of dishes which usually prepared are Tomato Rice ( Coconut Thuvaiyal), Tamarind rice ( Potato Chips) , Curd Rice ( Lemon, Mango Pickle) , Lemon rice ( Potato Chips, Potato Fry), Arisi Paruppu Sadam ( Potato Brinjal Fry, Pickel), Chappathi (Onion & Tomato gravy). You can also see these dishes can be prepared very easily and in less time. 

Nowadays no one has time for this kind of enjoyments, but still you can prepare this dishes for day to day lunch box , a difficult task for every wife and mother is to think and decide what to cook for lunch box :) So thought of sharing recipe for Arisi Paruppu Sadam. It is very easy & will be cooked in no time. Perfect choice for lunch box.




Ingredients:


Rice 1 Cup
Thoor Dhal 1/4 Cup
Onion  1 No (Medium Size , Finely Chopped)
Tomato  1 No (Medium Size , Finely Chopped)
Garlic 4 - Cloves
Green Chilli 1 - 2 Nos
Corainder leaves For garnishing
Red Chilli Powder 2 tblsp (As per taste)
Turmeric Powder 2 tsp
Salt As per taste
Oil 3 tblsp




Method: 

1) Soak Rice and Dhal in 2' deep water for about 10 minutes.

2) In a pressure cooker, heat oil add garlic, then add green chills and saute it till the garlic turns golden brown color.

3) Add Onions and saute it till the onions become translucent then add tomato, turmeric powder, red chilli powder and saute it well.



4) For 1 Cup rice we need to add 2 cups of water , here we are adding 1/4 of dhal so we need to add 2 and a half cups of water. Add salt for taste, then add coriander leaves now add Soaked rice and dhal to it. Pressure cook it for 3 whistles.

5) Let the pressure goes down open the lid , transfer the rice to the bowl to serve or to lunch box. It tastes too good if you add ghee or coconut oil to the rice while serving.
